Born from necessity and fueled by passion, our bakery began with one simple goal: to bring real bread back to the table. As a Type 1 diabetic, our founder and baker was tired of the chemical-laden, blood-sugar-spiking bread options on the market. Frustrated by limited choices, he set out to create something better—wholesome, organic sourdough made with clean, simple ingredients and time-honored techniques. What started as a personal health journey in a home kitchen has grown into a cottage bakery committed to nourishing the community. Thanks to the naturally low glycemic index and gut-friendly nature of our slow-fermented loaves, he’s been able to reduce his insulin intake and reconnect with food in a powerful way. Every loaf we bake is a labor of love, proof that bread can be both delicious and kind to your body.
